Wine Profile
Tasting Notes
Light and refreshing, the Grand Reserve Sauvignon Blanc is overflowing with citrus and tropical fruit on the nose, with subtle tones of lemon grass and herbs. Flavours on the palate are crisp with bright acidity and a fresh, citrusy finish.
Vineyard Notes
Unpredictable weather presented its challenges over this harvest. Record setting temperatures, intermittent drought, high rainfall and humidity were prevalent – Niagara saw it all this year. Our vigilant viticulture team persevered through the season to yield some incredible fruit. Despite the demanding conditions, the 2021 harvest proved to be outstanding for aromatic whites like Semillon, Sauvignon Blanc, Riesling and the fruit for sparkling programs. Although the acids were slightly lower than in previous years, reds showed good phenolic ripeness and we anticipate high quality blends from varieties such as Cabernet Franc, Cabernet Sauvignon and Merlot.
Production Notes
The fruit for this expressive Sauvignon Blanc comes from two vineyards, one in the Four Mile Creek appellation and the other the Lincoln Lakeshore. The fruit was left on skins for eight hours prior to being destemmed and pressed; cold fermentation lasted ten days at 16 °C. Each block was fermented separately, then blended to create a fruit-forward driven wine, innately characteristic of our Niagara terroir.
Winemaker Notes
The 2021 vintage is brimming with aromas of crushed passion fruit, gooseberry, frangipanni, green apple, guava, mango, lemon rind and just a hint ripe paw paw. The delicate minerality and vibrant acidity are well-balanced on the palate, highlighted by bright tropical notes and a long, lingering finish.
Food Pairing Notes
Enjoy this luscious Sauvignon Blanc with shrimp tempura, fish tacos, grilled avocado burger, creamy pasta with mussels, or garlic and chili butter scallops; perfect with flattened, barbecued Piri Piri chicken, too.
