This captivating wine is bursting with aromas of wild raspberry and ripe red apple, layered with subtle notes of strawberries and cream. The palate displays a vibrant mousse of freshly picked raspberries and rich pastry, complemented by nuances granite minerality.
A mild winter and warm start to spring allowed the vines to propagate under ideal conditions. Subsequently, temperatures cooled and growth slowed to a more normal pace. Despite this and average rainfall throughout the summer, there were plenty of sunny days that provided a balance of water and sunlight for the vines. Harvest started slightly later than normal, with our earliest varieties coming in early September. The vineyards benefited from ample sunshine and above average temperatures in the months leading up to harvest, yielding grapes of very high quality and abundant volumes of red and white varietals.
The fruit for this wine was entirely hand harvested. The Pinot Noir (100%) was whole bunch pressed, clarified and fermented. Secondary fermentation occurred in the bottle with carefully selected yeast, before aging on lees (sur lee) for more than 3 years. this aging period allowed for a fuller wine with incredible depth and complexity.

This beautifully versatile wine pairs extremely well with sweet and savoury. Try it with bruschetta, feta and spinach frittata, leek and onion puff pastry tart, spicy BBQ, and holiday roast turkey. For a special treat, enjoy with chocolate lava cake or strawberry cheesecake.
