Tasting Notes
The nose displays aromas of lovely baked red apples, Asian pears, lemon curd, phyllo pastry, creamy butter, and subtle nutmeg. This is complemented by candied lemon peel, ripe tangerine, and sweet vanilla bean. These characters follow through to the palate with a beautiful saline minerality derived from limestone soil and nuances of subtle toast from the oak.
Vineyard Notes
The 2022 harvest conditions in Niagara were for the most part favourable. A prolonged, harsh winter did yield some damage to several vineyards across the region. Despite this, we were favoured with an extended sun-filled summer ideal for ripening, and by early September we harvested our first fruit for sparkling. Due to the winter damage, we saw a reduced crop load, but an upswing in quality. Through autumn, we enjoyed fair weather with minimal rainfall. Harvest was completed on November 4th, a beautiful warm and sunny day for bringing in our last fruit of the season, Cabernet Franc and Cabernet Sauvignon.
Production Notes
Harvested from four of our most terroir expressive vineyards between September 28th and October 5th, the fruit was patiently waited upon until perfect ripeness and balance for hand picking. Once the juice was pressed, it naturally started fermentation at 16 degrees in tank before being transferred to barrel to finish. Each block underwent malolactic fermentation to completion in barrel and was allowed an 18-month elevage in French oak until yielding incredible complexity and balance.
Food Pairing Notes
This rich Chardonnay is perfectly matched with lobster gruyere mac and cheese, roast turkey sandwich on sourdough with cranberry jam and herb- crusted goat cheese, and BBQ pulled jackfruit with red cabbage coleslaw and home fries. Lovely with sharp cheddar and Gorgonzola cheeses.
