Tasting Notes
Aged en tirage for five years, this elegant Blanc de Blanc boasts notes of crispy green apple, buttered croissont, crunchy Bartlett pear and citrus zest, with a tight mineral structure and elegant balance. On the palate, a full and creamy mousse is supported by a round body and crisp, prolonged finish of pastry, lemon curd and fresh pear.
Vineyard Notes
A mild winter and warm start to spring allowed the vines to start the year in great shape. After a quick start to the season, temperatures cooled down a bit and growth slowed to a more normal pace. Despite the cooler temperatures and regular rain throughout summer 2017, there were also plenty of sunny days that provided a good mix of water and sunlight for the vines. Harvest started slightly later than normal, with our earliest varieties coming in the first week of September. The vineyards benefited from the ample hours of sunshine, the above average temperatures in the months leading up to harvest, providing grapes of very high quality and great yield for both red and white varietals.
Production Notes
Handpicked from our prized Claystone Vineyard, this fruit was whole bunch pressed, clarified and fermented with carefully selected yeast. Secondary fermentation occurred in bottle before aging on lees (sur lee) for five years. This aging period allowed for a fuller more expressive wine with incredible complexity to engage the palate.
Food Pairing Notes
An extremely versatile, delightful wine, best enjoyed with dishes like toasted ham and cheese croissants, fresh oysters on the half shell, mashed chick pea burger with alfa sprouts, and creamy truffle oil risotto. Many cheeses pair beautifully, such as Brie, Camembert, Roquefort and Gouda.
