This release is hand crafted in the time-honoured Méthode Classique and was ‘en tirage’ for 2 years. Refined bubbles express herbaceous and toasty citrus notes with a refreshing, luxurious finish.
The grapes were gently picked and left to "cold soak" on skins for up to 24hrs. They were then tenderly pressed in an effort to handle the delicate juice as gently as possible. The Sauvignon Blanc was cool fermented in stainless steel tanks with carefully selected yeast for up to 3 weeks before the best and most expressive lot was selected as the base wine. This wine was refermented in bottle with specific sparkling wine yeast and aged “en tirage” (sur lee) for 1 year to extract body, flavour and aromatics, but not long enough to overpower the delicate aromas of the variety.
The classic varietal characters of Sauvignon Blanc are exaggerated as a sparkling wine. Intense aromas of lemon grass, grapefruit, pineapple and tropical fruits are complemented by a persistent mousse and bright acidity. The flavours follow from the nose and finish with a hint honey and lemon.

This delightful wine is the perfect accompaniment to dishes like spicy Asian curry, pasta with asparagus in lemon cream sauce, tomato & cilantro marinated chicken, and goat, brie, and sharp cheddar cheeses.
