Ingredients
  • 300 g Woolwich Dairy CHEVRAI Lemon & Lime Soft Unripened Goat Cheese
  • 3/4 cup shredded coconut
  • 300 g Woolwich Dairy CHEVRAI Original Soft Unripened Goat Cheese
  • 3/4 cup tart dried cherries or cranberries, finely chopped
  • 1/2 cup shelled pistachios, lightly toasted and finely chopped
  • 1 large pinch of salt, optional

Sweet Lollipops

Divide Woolwich Dairy CHEVRAI Lemon & Lime Soft Unripened Goat Cheese into 8-10 evenly-sized balls. Roll each ball in shredded coconut, until well covered and transfer to serving plate. Put a toothpick or lollipop stick into the center of each ball. Serve immediately with your favourite crackers or refrigerate up to 1 day.

Savoury Lollipops

Add 3 tbsp of chopped dried cherries to the Woolwich Dairy CHEVRAI Original Soft Unripened Goat Cheese and mix in just until incorporated. Combine remaining cherries and chopped pistachios in a medium-sized bowl. If pistachios aren’t already salted, add a large pinch of salt to the mixture to taste. Divide goat cheese cherry mixture into 8 to 10 evenly-sized balls. Roll each ball in cherry pistachio mixture until well covered and transfer to serving plate. Put a toothpick or lollipop stick into the center of each ball. Serve immediately with your favourite crackers or refrigerate up to 1 day.
