Tasting Notes
This wine has abundant fruit character on the nose with ripe notes of ripe
clementine and candied lime. Warmer notes of baked apple and brioche are also prominent.
On the palate, flavours of fresh squeezed grapefruit, peach and a touch of biscuit dominate,
while gorgeous minerality on the back palate lends a touch of weight to a crisp and
structured finish.
Food Pairing Notes
This wine's effervescence and fruit forwardness makes it excellent to pair with
fried foods such as oysters and ceviche. For a more casual approach, pair this sparkling wine
with popcorn or kettle chips. Avoid foods that are overly bitter, as the wine’s acidity will
draw them out. Cheeses that would pair nicely include those richer creamier cheeses like
Brie. But, for a truly outstanding pairing consider a French or Swiss mountain aged cheese,
like Comte or Gruyere.
