Tasting Notes
On the nose, ripe raspberry is complimented by a touch of rhubarb and pomelo. On lees for five years, there is a vibrant acidity on the palate expressing beautiful tart strawberry and red currant notes. Rosalie exhibits a decadent mousse, and a finish that remains crisp and dry with a hint of pie crust.
Production Notes
Crafted exclusively from the Pinot Noir grape, the colour of a rosé sparkling wine poses a great challenge for winemakers. While some producers find comfort and consistency in using Pinot Noir reserve wine to achieve a rosé colour, our winemaker is adamant in relying solely on the Pinot Noir skins to achieve Rosalie’s light, pastel coral colour.
Food Pairing Notes
Our favourite food pairings for this wine are smoked trout with chive crème fraiche, grilled salmon or shrimp, kale salad with a creamy lemon vinaigrette or sushi. For desserts, Rosalie pairs beautifully with fresh berries, strawberry cream tarts, old-fashioned style doughnuts. For cheeses, we highly recommend Manchego, Mozzarella and Gouda.
