Tasting Notes
This wine leads with a perfumed fragrance of fresh apple blossom,
wildflowers, guava, lime cordial, and supple apricot and nectarine. A
mouthwatering palate displays racy green apple, lemon curd and chalky
mineral tartness.
Vineyard Notes
The mild winter of 2023 transitioned into a warm spring, prompting bud break
1-2 weeks early depending on location. However, hopes for an exceptional
vintage waned due to one of the wettest growing seasons on record,
heightening disease pressure until September. Conditions shifted in September,
offering ideal weather for a classic Niagara vintage. Moderate warmth during
the day and cool nights, coupled with minimal rainfall, preserved acidity and
freshness in aromatic whites and sparklings, while reds achieved optimal
phenolic and flavour ripeness with rich colour accumulation, allowing for
selective picking tailored to desired wine styles. Overall a classic Niagara vintage
across the board for all wines.day for bringing in our last fruit of the season, Cabernet Franc and Cabernet Sauvignon.
Production Notes
The fruit for this elegant Riesling came from our prized Talon Ridge vineyard
located on the Vinemount Ridge sub-appellation. The fruit was destemmed
and had 12 hours of skin contact prior to pressing, allowing for the perfect
extraction of varietal character. Fermentation proceeded at 13 Celsius for over
two weeks before being arrested to capture the perfect balance of sugar and
acid freshness. The wine spent six months on fine lees in stainless steel prior to
bottling in April 2024.

Try this delightful wine with classic ramen with pork and veggies, grilled
vegetable sandwich with hummus, tahini, and candied lemon, and currywurst
on garlic naan with pickled onions and yogurt drizzle. Perfect with aged Gouda
and Parmesan cheeses.
