Tasting Notes
The nose displays bright red and black currant tones up front leading into ripe, wild strawberry, wild raspberry and black cherry complemented by cedar box, fresh leather, and mocha characters from the oak aging. The palate carries a rich and savoury character of red fruit and baking spice with lots of tension across the mid palate yet finishes with a long and smooth tannin balance with great generosity of fruit from start to finish.
Vineyard Notes
The 2022 harvest conditions in Niagara were for the most part favourable. A prolonged, harsh winter did yield some damage to several vineyards across the region. Despite this, we were favoured with an extended sun-filled summer ideal for ripening, and by early September we harvested our first fruit for sparkling. Due to the winter damage, we saw a reduced crop load, but an upswing in quality. Through autumn, we enjoyed fair weather with minimal rainfall. Harvest was completed on November 4th, a beautiful warm and sunny day for bringing in our last fruit of the season, Cabernet Franc and Cabernet Sauvignon.
Production Notes
The fruit for this wine was grown across the Niagara Peninsula at some of our most prestigious vineyards. Harvested between late October and early November the Merlot, Cabernet Franc and Cabernet Sauvignon grapes were processed separately and afforded a 72-hour cold soak prior to being inoculated for fermentation. Near the end of the primary fermentations, malolactic fermentations began before the wines were pressed off skins and sent to barrel to finish. These wines spent 18 months in a combination of French and American oak (28% new) before blending and bottling.
Food Pairing Notes
Pairs well with stuffed portebello burger with pickled onions. Dry-rubbed Cajun pork tenderloin with spring salad. Pizza Alla Pala with prosciutto and cherry tomatoes.

Deep ruby red, the nose shows black cherry, blackberry, peppers, mocha, cedar, herbs, sous bois and graphite. Refreshing black cherry and spice on the finish. Decant before serving and enjoy with grilled pork tenderloin. Tasted May 2022. Matt Steeves - www.quercusvino.ca
