Wine Profile
Tasting Notes
The nose of this wine bursts with intense ripe nectarines, apricot jam and candied lemon peel with hints of filo pastry and baked apple stewed in aromatic baking spices. The palate is supple and rich with a bright and playful mousse. On the palate characters of stone fruit preserve and marmalade become more concentrated, creating a long and luxurious finish.
Vineyard Notes
A mild winter and warm start to spring allowed the vines to start the year in great shape. After a quick start to the season, temperatures cooled down a bit and growth slowed to a more normal pace. Despite the cooler temperatures and regular rain throughout summer 2017, there were also plenty of sunny days that provided a good mix of water and sunlight for the vines. Harvest started slightly later than normal, with our earliest varieties coming in the first week of September. The vineyards benefited from the ample hours of sunshine, the above average temperatures in the months leading up to harvest, providing grapes of very high quality and great yield for both red and white varietals.
Production Notes
Mostly hand harvested from our estate vineyard, the base of this blend is Chardonnay (70%), Pinot Noir (27%) and Pinot Meunier (3%). The fruit was whole bunch pressed, clarified, and fermented in separate lots. The base blend was carefully orchestrated to create a balanced, elegant wine. Secondary fermentation occurred in bottle before ageing on lees (sur lee) for three years. This yielded a fuller wine with incredible complexity to engage the palate. The wine was disgorged and topped with our luxurious Vidal Icewine, infusing it with the nuanced expression of a truly Canadian staple.
Food Pairing Notes
This incredibly versatile wine pairs beautifully with Dal Tadka with garlic naan, asparagus cucumber hand roll with seaweed salad, pork Wellington with mushroom duxelle and baked apple, and baked Brie with apricot preserves.
