Tasting Notes
This outstanding wine displays aromas of stewed strawberries, raspberries,
pomegranate, dried figs, fresh caramel, saltanas, and dried cranberries with
hints of rhubarb and sugar plums. It shows a soft, luscious palate that
explodes with dried fig, raspberry and candied cherry. This is a beautifully
fruit forward, balanced and complex wine.
Food Pairing Notes
Not just for dessert, this versatile wine is well matched with dishes like arugula
salad with candied salmon & French beans, black olive tapenade, Black Forest
cake with spiked sour cherry mousse, blue-veined Triple Cream Brie and aged,
hard cheeses.

I picked up a bottle after sampling it at the winery in Niagara. It is amazing! Perfect to serve as part of a desert after dinner. Paired well with dark chocolate and strong cheese.

Cab Franc is the pinnacle of icewine. It is of course sweet, but goes way beyond. It is rich and smooth and makes a great after dinner drink.
