Tasting Notes
The nose displays pungent black current, black plum, cassis and ripe blackberry notes with toasted clove, black licorice and dried tobacco leaf. The palate opens with ripe black cherry fruit, rich dark chocolate and minty notes; this is followed by firm yet well-integrated tannins and a long finish. This wine will age beautifully for 10-15 years. If opening now, decant for two hours prior to serving or pair with rich, rare game meats.
Vineyard Notes
The 2022 harvest conditions in Niagara were for the most part favourable. A prolonged, harsh winter did yield some damage to several vineyards across the region. Despite this, we were favoured with an extended sun-filled summer ideal for ripening, and by early September we harvested our first fruit for sparkling. Due to the winter damage, we saw a reduced crop load, but an upswing in quality. Through autumn, we enjoyed fair weather with minimal rainfall. Harvest was completed on November 4th, a beautiful warm and sunny day for bringing in our last fruit of the season, Cabernet Franc and Cabernet
Sauvignon.
Production Notes
The fruit for this wine was grown on the Beamsville Bench at Heron Pond Vineyard. Harvested on November 4th, the grapes were afforded a 72-hour cold soak prior to beginning inoculation fermentation between 30-32c. Malolactic fermentation began before the wine was pressed off skins and sent to barrel to finish. This wine spent 18 months in a combination of French and American oak (30% new) before blending and bottling on August 23rd 2024.
Food Pairing Notes
Pairs well with Rosemary braised lamb shanks with roasted root vegetable medley. Dry-aged ribeye steak with garlic mash and freshly grated horseradish. Wood ear mushroom and eggplant rigatoni with truffle cream sauce.
