Tasting Notes
The nose is an inviting mix of fruits and herbal florals. Red cherry juiciness and
ripe peach are met with delicate hibiscus and raspberry tea leaf notes. The palate
matches that red cherry dive with fresh pink grapefruit, and great minerality to
help accentuate the mouth-watering, dry finish.
Production Notes
Rosé is a wine that is crafted. Shaped by technique, fruit selection and style.
Direct pressing the Pinot Gris and Pinot Noir grapes right when they arrived
ensured a freshness, delicacy and purity. The Gamay Noir and Syrah were cold
soaked on their skins for three days, extracting flavour and some colour before a
process called Saignée where juice is bled off the tank and fermented separately.
This juice has a deeper colour, riper fruit expression and more structure.
Countless hours were spent tweaking the blend, until our winemaker landed on
what was both juicy and agreeable but also delicately nuanced and complex.
Food Pairing Notes
Try this wine with Mediterranean dishes, tuna nicoise salad, or pulled pork
sandwiches. This wine would also pair beautifully with pasta in a rose sauce, or
something lighter like a watermelon basil salad with salted feta for a perfect
warm weather pairing.
