Vineyard Notes
After an unusually cold winter, 2025 bud break emerged later than average on
May 10th. Cool temperatures persisted through much of May and early June,
delaying flowering by almost two weeks. Seasonal conditions began to build
in late June and continued for much of July and August, resulting in small
berries and loose clusters for most varieties. Harvest began on Sept 8th with
Pinot Noir for our sparkling program, and progressed at a rapid pace thanks to
consistent warm, dry conditions through September. Temperatures remained
steady, leading to outstanding ripeness and concentration sufficient enough to
rival the 2020 vintage for big, bold reds.
Production Notes
Fruit from our Delaine Vineyard was picked on October 9 at optimal ripeness.
After a 12-hour cold soak on skins, the juice was pressed to stainless steel for
settling and a 17-day cool fermentation at 13C using aromatic yeast strains. The
wine was aged on lees for 6 months before bottling, with 10% barrel fermented
in neutral French oak barriques for added texture.
Winemaker Notes
This wine is brimming with notes of Turkish Delight, coriander, nutmeg,
orange blossom, grapefruit and elderflower aromatics. On the palate, this
wine is built on an oily, yet refreshing frame that is supported by intense
flavours of lychee, rosewater, lemon curd, and fresh ginger.
Food Pairing Notes
This incredibly vibrant wine is perfect served with dishes like Vindaloo curry
with mango chutney, Malaysian coconut laksa, ginger chili shrimp and General
Tao chicken. Try it with Gorgonzola, Roquefort or Camembert for a special
treat.
