Tasting Notes
Aged en tirage for three years, this beautiful, Brut boasts hints of toast, and zest, with a tight mineral structure. On the palate, a lasting, delicate and creamy mousse is supported by a round body and crisp, prolonged finish.
Production Notes
Handpicked from our estate vineyard , this blend of Chardonnay (70%), Pinot Noir (27%) and Pinot Meunier (3%) was whole-bunch pressed, clarified and fermented in individual varietal batches. The base blend was carefully orchestrated to create a balanced and elegant wine. Secondary fermentation occurred in bottle with carefully selected yeast, followed by aging on lees ('sur lie') for 3 years. This period allowed for the development of a fuller wine with incredible complexity, to further enhance the palate.

Aged en tirage for more than 3 years, this beautiful Brut boasts hints of red apple peel, nectarines, dried apricots, toasty filo pastry and citrus zest, with a tight mineral structure and fine balance. On the palate, a lingering full and creamy mousse is supported by round body and a crisp, prolonged finish. Look for notes of pastry crust, apples and marmalade.

Pairs well with toasted ham and cheese croissants, oysters, asparagus and gruyere tart, Thai coconut curry, mussels, or enjoy on it's own as a delightful, exquisite sipper.
