Tasting Notes
Bright black cherry and dark plum on the nose deepen into sweet spice with a hint of
spearmint. On the palate the concentrated fruit follows through and is complemented by a
rich note of baker’s chocolate. Full bodied with ripe, structured tannin and a touch of
smokiness, our 2019 Merlot has a long finish.
Production Notes
This Merlot strikes a beautiful balance between the robust fruit notes inherent to the
varietal and the complexity resulting from 18 months in French oak. Firm yet elegant
structure forms the backbone of this wine, while plush textures and flavours on the palate
keep it approachable.
Food Pairing Notes
This wine’s full body and rich flavour profile reaches for an equally robust food pairing.
Consider such classics as a lean steak or pan-seared duck breast to match the Merlot’s
smooth tannins. With Merlot’s abundance of fruit though, it will be all about the sauce - a
savoury blueberry sauce with the duck would match the fruit, whereas a peppercorn sauce
with the steak would allow Merlot’s fruit to become the star. For cheeses, Monterey Jack
or Beaufort would be ideal.
