Unique characteristics of eucalyptus and thyme on the nose open up more broadly into notes of savoury dark florals and bergamot. With an incredibly refined mousse, the palate leads off with great acidity and notes of fresh tropical fruits. Quite reminiscent of our table wine, the richness of this sparkling wine develops on the mid-palate with a decadent mouthfeel. A burst of tart lemon on the back palate keeps the finish clean and structured.
