The fruit for this elegant Riesling came from our very best, select Niagara Peninsula vineyards. The fruit was destemmed and immediately pressed to extract the abundant varietal characteristics and cold fermented at 13°C for ten days. Fermentation was then arrested specifically to capture the perfect sugar and acid balance.
