Tasting Notes
This unique and beautiful traditional method sparkling is a joy to the senses, with a deep purple colour and dark inky mousse. On the nose there is an immediate presence of dark chocolate, cocoa, toasted vanilla bean, blueberry compote and wet gravel. The palate is rich, velvety in texture leading the way to a medley of roasted coffee beans, cedar, and black currants with a perfect balance of acidity to carry the intensity of flavours through on the finish.
Production Notes
This fruit was harvested from our Tufford Rd vineyard in late October with the perfect balance of dark fruit and natural acidity. The grapes were crushed and destemmed into roto fermenters, and cold soaked for 72 hours prior to fermentation. Post-ferment, the wine was pressed off skins and aged in American and French oak for over 12 months. Choice barrels were selected for the sparkling blend and emptied to tank to begin triage. This wine sat on secondary ferment lees for over a year prior to the disgorging process.

Food Pairing Notes
This exceptionally versatile sparkling wine pairs beautifully with dishes like grilled lamb burger with olive tapenade, mushroom paella with Jerusalem artichokes and truffle, and smoked rib rack with baked beans, southern slaw and cornbread. Excellent with goats’, smoked Gouda and gorgonzola cheeses.
