This Riesling Icewine shows the elegance of tropical aromas and flavours of lemon and lime. The good acidity of Riesling allows for a refreshing mouth feel amid the many layers of flavours that unfold.
Vineyard Notes
The 2024 vintage began with vines in peak condition, settling into winter
dormancy strong and healthy, so when Spring arrived warmer than usual,
accelerating bud development. By mid-November, harvest wrapped, but
the season wasn’t quite over. Icewine grapes remained on the vines until
early in the new year, where they were picked under textbook conditions.
This year, nature was kind—minimal losses to dehydration, wind, or birds,
which can often be a challenge. As the cycle closed, vines returned
to dormancy in pristine condition, setting the foundation for another
remarkable vintage to come.
Production Notes
Grapes for this Riesling Icewine were harvested at frigid -10°C. After hours
of pressing, the concentrated juice was settled, moved to a fermentation
tank and inoculated with a specific strain of yeast. Fermentation was done
at a cool 15°C for 23 days until a balance of sugar, alcohol and acidity
remained.
Winemaker Notes
Beautifully balanced acidity and intense flavour. This Inniskillin Riesling
Icewine has notes of lemon grass, and honey dew melon on the nose.
While on the palate, citrus and lime flavours highlights the fresh acidity.
This vintage is well balanced, delivering impressive concentration of flavour
alongside rich, ripe fruit.

2024 Riesling Icewine pairs well with many kinds of desserts including
key lime pie, lemon tart and classic New York cheesecake.
