Tasting Notes

This Riesling Icewine shows the elegance of tropical aromas and flavours of lemon and lime. The good acidity of Riesling allows for a refreshing mouth feel amid the many layers of flavours that unfold.

Vineyard Notes
A slow start to the growing season did not hold the 2018 vintage back. Cool temperatures in April quickly shifted to very warm day in May and the vines took off. The following months, through the summer continued to be perfectly ideal for grape growing, with plenty of hot, dry, sunny days. The above average temperatures did not change much approaching harvest season, in fact they were coupled with humidity and rain forcing an early start to picking, with the first grapes arriving at the winery Aug 30th. We experienced some Botrytis in the Viognier blocks but managed to avoid rot elsewhere. Luckily there were enough dry days in the following months that all varieties were brought in by early November at optimal quality.
Production Notes
This unique Canadian product was harvested at the height of Canada’s crisp winter. Naturally frozen on the vine and then picked when the temperature drops to a frigid -10°C. Only a few drops of concentrated nectar can be squeezed from each bunch. The juice is then slowly fermented to achieve a rich, specialty wine know as Icewine. This 2015 Riesling Icewine was fermented at a cool 15°C for 21 days until a perfect balance of sugar, alcohol and acidity remained.
Winemaker Notes
Aromatics of fresh orange, lemon, lime and spice . On the palate this rich and elegant Icewine boasts smooth texture and concentrated flavours of peach and apricot along with a hint of clove balanced by a crisp, lively acidity.
Food Pairing Notes
Serve this well chilled, with Oka or Brie drizzled with lavender honey, firm aged Cheddar or your favourite pâté topped with a pear or peach chutney. You could also try this with seared scallops and an apple celery slaw.

Went to inniskillin winery and tried ice wine for the first time. This riesling does not disappoint, the perfect sip that pairs well with chocolate or even a fruit sorbet. Delicious notes of apricot and lychee. NOM.
