Tasting Notes
Exotic fruits, peaches, oranges and honey dominate the nose of this unique icewine. The palate continues with citrus, mango, lychee and pineapple balanced by a crisp acidity and lively effervescence. An Inniskillin classic!
Vineyard Notes
A slow start to the growing season did not hold the 2018 vintage back. Cool temperatures in April quickly shifted to very warm day in May and the vines took off. The following months, through the summer continued to be perfectly ideal for grape growing, with plenty of hot, dry, sunny days. The above average temperatures did not change much approaching harvest season, in fact they were coupled with humidity and rain forcing an early start to picking, with the first grapes arriving at the winery Aug 30th. We experienced some Botrytis in the Viognier blocks but managed to avoid rot elsewhere. Luckily there were enough dry days in the following months that all varieties were brought in by early November at optimal quality.
Production Notes
The grapes for this Icewine were harvested at an average temperature of -10°C. Pressed immediately upon their arrival at the winery, the resulting juice was an ideal 37.7 brix for a sparkling Icewine. Inoculated with a very specific strain of yeast, the juice was allowed to ferment under pressure in a charmat tank at an average temperature of 17°C until it reached an alcohol of 9.5%.
Winemaker Notes
Bright aromas and flavours of fresh tropical fruits dominate the nose and palate. This unique styled Icewine is overflowing with notes of ripe peach, candied lemon, juicy pineapple and lychee, and is balanced by the dry sensation brought forth by the effervescence. The juicy and concentrated flavours dance on your palate, through to an extended, fruit filled finish.
Food Pairing Notes
Tuna tartar with fresh chili and tempura blue crab with mango and cucumber salsa. Rich cheeses from brie to blue. Fresh fruit desserts and great with crème brulee.
