Tasting Notes
Aromas of vanilla, toast, ripe apple and pear integrate well in this Chardonnay. The aromas replay in the flavours, with citrus notes and a touch of clove that carry through to a clean and extended finish.
Vineyard Notes
The 2019 harvest was predictably late in getting underway, starting September 6th. The sunny, cool weather and low humidity that kicked off harvest allowed the fruit to develop phenolic ripeness for an extended period without breaking down. There was an unusual and early cold snap in mid-November, along with close to 30 cm of snow on November 11th. Growers were confronted with some challenges as they navigated machinery through snowy vineyards, but prevailed successfully and wrapped up harvest on November 26th.
Production Notes
The grapes for this classic varietal wine came from select vineyards in the Niagara Peninsula. Gently crushed and pressed the juice was allowed to cold settle for 48 hrs. before racking off clean and fermenting in new and older French and American Oak.
Winemaker Notes
Aromatics of toasted oak and vanilla compliment the flavours of pear, fig, apple and a touch of spice, rounding out this well balanced approachable classic variety.

Pairs well with roasted halibut with papaya and carrot sauce; pasta with grilled vegetables; grilled chicken breast with a mango salsa; truffle cauliflower soup.
