Tasting Notes
This Cabernet Sauvignon is full bodied with notes of blackberry, sweet tobacco leaf and warm caramel with velvety tannins on the finish.
Vineyard Notes
Although the 2019 harvest season in Ontario was delayed due to somewhat damp and cool conditions, over all it was a satisfying season. We experienced an unusually late start to certain varietals and harvest this year, with the first fruit picked late September. While ripening took longer than is the norm, the quality was exceptional. The balance of the sparkling fruit was picked by late October and showcased terroir driven sparkling varietals. There was a strategy as to when to pick Pinot Noir and Chardonnay at their peak, before damper late autumn conditions settled in. Having negotiated this, we delivered some classic and elegant wines.
Production Notes
Harvested from our Heron Pond vineyard in November, the fruit was left hanging until perfect ripeness and balance before harvesting. It was carefully crushed, destemmed and sent to tank to cold soak for 72 hours. The tanks were warmed to begin the ten day fermentation with carefully selected yeast. The tanks pumped over twice a day, extracting colour and flavour before gently pressing and completing malolactic fermentation. The wine was then afforded an 18 month elevage in predominantly American oak, until it yielded incredible complexity and balance.
Winemaker Notes
This luscious Cabernet Sauvignon displays vibrant notes of violets, lilacs, blackcurrants, pink peppercorn and sweet tobacco with a dusty and generous oak profile. Flavours of plush, dark fruits with generous tannins lead to a smooth, robust finish with hints of freshly brewed hazelnut coffee.
Food Pairing Notes
This rich, elegant wine is perfectly matched with dishes like sticky BBQ beef ribs, pan-roasted veal chops, beef carpaccio, blue cheese burgers, and cheeses like aged cheddar, Gruyere, Asiago and Pecorino.
