Tasting Notes
This release is hand-crafted in the time honoured Méthode Classique and was ‘en tirage’ for over 1 year. Bringing a 'shade of red' to refined bubbles, our Sparkling Merlot exudes fruity vanilla and toasty notes, with a refreshing luxurious finish.
Production Notes
Only the very best lot is chosen to produce Entourage Sparkling Merlot. The grapes are cold macerated to extract colour and flavour prior to fermentation with a carefully selected yeast for 10 days. After pressing. the resulting wine is sent to complete malolactic fermentation before aging in barrel for 6 months. The wine is prepared to undergo a secondary fermentation using "Method Classique", aging sur lee for 1 yr. After aging, the wine is riddled and disgorged with a small sugar adjustment made to attain the perfect balance.
Winemaker Notes
Bold and powerful boasting aromas and flavours of juicy, ripe, dark fruits which are complemented perfectly by rich notes of chocolate, espresso and smoke. A full persistent mousse is supported by supple tannin and a concentrated finish lingering with hints of dark chocolate and ripe raspberry.
Food Pairing Notes
This sparkling Merlot is bold and flavourful. Pair it with Italian sausage with fennel, grilled chicken or tuna, pulled pork, lasagna and cheeses such as Pecorino, Parmigiana Reggiano and Grana Padano.

I discovered this product 2 years ago. It is original, plenty of taste... so much good ! Since then, I always make sure to have 4-6 bottles anytime !

Dégusté lors d'un souper entre amis, excellent je suis tombée sous le charme. Dommage qu'il ne soit pas disponible au Québec dans les SAQ.
